Renowned chef from Lyon and Meilleur Ouvrier de France, Joseph Viola brings his culinary vision and expertise to the Relais de Chambord as consulting chef. Author of the book La délicieuse cuisine traditionnelle française, he draws his inspiration from the grandeur of the château and the timeless elegance of authentic, generous French bourgeois cuisine. Alongside him, chef Marion Carraud implements the menu with precision and elegance, crafting seasonal and local cuisine with finesse. Together, they form a culinary partnership that combines respect for tradition with contemporary creativity.
From the elegant table of Le Grand Saint-Michel, to the charm of Les Armes du Château and the understated sophistication of the Bar du Relais, each space offers its own interpretation of Chambord’s rich spirit.
The Grand Saint-Michel is situated in the old dining room of the Relais: elegant, inviting and quietly luxurious. Each dish tells a story of place and season and is a celebration of local terroir and timeless technique. From slow-simmered game to delicate river fish, pâté en croûte to richly comforting classics, this is tradition without pretence. Open for lunch from 12pm until 2.30pm and for dinner from 7pm to 10pm.
At Les Armes du Chateau, on the Place Saint-Louis, you find a charming ambience where local flavours take centre stage. Here, Joseph Viola’s philosophy comes to life in a more casual setting—familiar, comforting, and generous. Whether it’s a simple lunch between château visits or a relaxed break with friends, every plate carries the signature of true craftsmanship. Expect honest French fare—well-executed, beautifully sourced, and served with an easy charm that feels like home. Open from 10am until 5.30pm with lunch service from 12pm to 3pm.
